Maple Block sets the stage with “highbrow” BBQ, a symphony of taste that’s straight outta culinary finesse. Venture to Compton’s own Bludso’s (now on La Brea & Melrose), where the BBQ game is as authentic as the streets it originated from. Adam Perry Lang’s pop-ups? They’re a culinary cipher, flipping the script on tradition with every smoked creation. And then there’s Moo’s in Lincoln Heights, an East Side gem spitting flavors like rhymes in a lyrical masterpiece. Join us on this BBQ tour, where smoke, fire, and flavor collide in harmony, leaving our taste buds vibing to the rhythm of slow-cooked perfection.
Now in no certain order…
1. Maple Block
Maple Block, for us, almost clinches the title of the ultimate in “highbrow” or “gourmet” BBQ.
Tucked a mere half mile from our place, it’s a spot we’ve frequented. The layout is smartly designed, and the staff? Top-notch—welcoming and on point.
The drink selection kicks things off, always flaunting some specials, both boozy and non-alcoholic. We recently went for the apple pie soda, and let us tell you, it was downright fantastic.
Now, when it comes to ordering, we stick to the 3 meat combo. At first glance, it might not seem like a massive feast, but by the time we clean our plates, we’re consistently satisfied. Ribs are our go-to, stealing the show, while the sausage is the dark horse, and the smoked chicken and brisket? Always dependable.
Yet, there’s a tiny hiccup—the price tag (but you’ll find that when dealing with this level of BBQ – every location on this list is expensive and you get what you pay for), particularly if you’re feeding the whole gang. It’s a quibble, really, in an otherwise flawless BBQ symphony.
Maple Block is almost the epitome of upscale barbecue with a neighborhood vibe, where any minor gripes vanish like smoke, leaving only the lingering essence of a culinary experience that’s truly worth savoring.
2. Bludso’s
Originating in Compton, CA, Bludso’s BBQ started as a classic, old-school joint. Our initiation into the realm of elevated barbecue happened at their newer, shinier spot on La Brea, just south of Melrose. Little did we realize that this would redefine our expectations of what exceptional BBQ could truly deliver.
Their reputation for brisket is well-deserved. A masterpiece with a seasoned crust, smoke ring flawlessly moist, and boasting a beefy interior cooked to perfection.
Now, we’re suckers for pork ribs, and in our book, they steal the show. Impeccably seasoned perfectly smoked, with just the right amount of resistance when you sink your teeth in—enough to make each bite feel substantial. Toss in a bit of their sauce, and you can go at these without the need for anything else.
The menu covers all your BBQ essentials: pulled pork, rib tips, chicken, a colossal beef rib, and links (including the Texas red hot and chicken varieties). They even cater to the vegans with jackfruit.
Being one of the OGs in the BBQ game comes with its perks, and Bludso’s capitalizes on its experience. The sides and sauces are a testament to their seasoned expertise, rounding out a menu that’s a true ode to the barbecue craft.
3. Moo’s Craft BBQ
We came to visit by way of not getting what we were trying to get first. One Saturday morning, we found ourselves at an Adam Perry Lang pop-up by accident – missed the memo it wasn’t open that day. Took to Adam’s Instagram to share our mishap, and guess what? He swings by for a chat and a beer. Stand-up guy.
Still on the BBQ hunt, Adam recommends Moo’s. What a great look that was. We practically emptied our wallets trying to order the entire menu because, it’s a food lover’s paradise.
Can’t go wrong with “The Meat Sweats.” Brisket, pork ribs, pulled pork, turkey, sausage—all in one go. And those sides? Top-notch. Red potato salad, slaw, and brisket-loaded beans stole the spotlight. Missed out on the chili, but mark our words, we’re coming back for it. The elote special? A masterpiece. They should make it a permanent menu item.
For sandwiches, we opted for the chopped brisket and the pork sando—each a meal on its own. The bar boasts a selection of craft beers to keep you entertained while they prep your feast. And they take very good care with the to-go packaging.
Anytime we’re even remotely near Lincoln Heights, you can bet we’re making a pit stop at Moo’s.
4. Adam Perry Lang Pop-Ups
Adam Perry Lang’s pop-ups defy easy description. His culinary technique and ingredient mastery deserve a spot in the most prestigious culinary institutions. To grasp the full scope of his artistry, you must experience it firsthand.
At the outset, he delves into classic BBQ fare—monstrous beef ribs, otherworldly pork ribs, and brisket that practically dissolves on your tongue. Yet, unpredictably, he might throw duck or freshly caught trout into the smoker. Always in motion, constantly redefining the boundaries of barbecue cuisine, he typically operates on weekends. If you’re wise, you’ll track down his location and get in line early. There, you’ll witness Adam expertly slicing meat to order—a show in itself. If luck is on your side, he might even pass you a tantalizing sample. Some lines even have bars, so you can enjoy a beverage while you wait.
Each meal is accompanied by a thick cut of bread, peppers, pickled onions, and slaw—all harmonizing seamlessly. Don’t hesitate to indulge in any special sides offered that day. APL’s culinary creations possess a distinctiveness that elevates him beyond barbecue; he stands out in the entire culinary landscape. Few places or meals have had a similar impact on our palate—think Providence, Wolvesmouth Dinners (especially the Thanksgiving feast!), n/Naka, to name a few. Still, the uniqueness of APL’s offerings demands an in-person experience.
When it’s decision time, our advice is to bring $250-$300 and order one of everything. Choose one item to savor on the spot – if there’s seating available – and take the rest to go.
